What it is
Crispy croissant dough filled to the brim with vanilla bean custard, topped with a torched, crackly caramelized-sugar crust. It's basically crème brûlée and a croissant fused into one pastry — the satisfying sugar crack on top, then all custard underneath. Gaston's Tavern, tucked into New Fantasyland between Be Our Guest and Under the Sea — look for the Gaston statue out front. It's quick service, and it tends to close around 7 PM (earlier than the park), so grab it earlier in the day and double-check hours in the My Disney Experience app.
Order it, hold it, and whatever you do, don't try to cut it — the custard will make a break for it. This is a grab-napkins, lean-forward kind of snack.
Why it's a July pick
Summer mornings are peak Magic Kingdom, and after a rope-drop sprint you want something rich but quick. This is portable, easy to split two or three ways, and the cool custard center is a nice contrast to the heat. If you want savory instead, Gaston's also does a Ham & Gruyère Tart — but for a sweet July treat, this beats the cart churro a few steps away, easily.
